The Assistant Manager, Dining Operations reports directly to the Food & Beverage Director; Under minimal supervision, responsible for all the a la carte dining operations, including, but not limited to preparing dining room meals and/or special functions (set up and/or close), provides helpful service to members, and oversee cleanliness protocol for all dining areas & private rooms as necessary. Performs work in accordance with Institute and regulatory agencies safety standards, and practices.
Job Duties - Provides oversight and direction to all a la carte dining which includes the Main Dining Room, Hayman Lounge, Rathskeller and the Rath al Fresco and private rooms when utilized for a la carte dining. Provides supervision to hostesses, waiters and bus persons during breakfast, lunch and dinner service - Works with other departments to develop dining & private room set up for meals and special functions; coordinates dining room set up with other staff; oversees dining rooms cleanup/break down and locks up the club according to protocol at the end of the evening after events are done - Provides information to members on services available; answers questions regarding dining room offerings and activities - Monitors equipment in dining room areas and notifies supervisor for maintenance requests - Has knowledge of menu and any daily specials being offered; takes members' and guests' orders; may prepare tableside foods and/or beverages according to order; ensures member's order is delivered, presented and served according to protocol - Maintains maximum standards of sanitation and safety - Ensures cleanliness and sanitation of server preparation areas; stocks server preparation area with necessary items - Provides management with observations on member needs and feedback (i.e. preferred foods, quality of services, etc) - May take reservations and make seating chart assignments for wait staff - May participate in inventory and/or place orders for dining room and bar supplies - May participate in opening and closing shifts (reconciling) on POS system - Other duties as assigned by the Food & Beverage Director
Basic Qualifications - Requires minimum of 5 years progressively responsible supervisory/lead experience in a fine dining and/or banquet operation - Must be at least 21 years of age - ServSafe certificate or ability to obtain within 6 months of employment - Must possess excellent communication (verbal/written), interpersonal, and organizational skills. Must be a self-starter and able to prioritize multiple tasks; train staff, work with minimal supervision; exercise good judgment; be highly motivated and detail oriented - Ability to lift up to 50 pounds / Ability to stand for extended periods of time - Weekend and holiday work scheduling required as business demands
Preferred Qualifications - Familiarity with private club operations preferred - Prior experience and knowledge of wines and or bar operations
