Position Description: Under supervision of the Executive Chef and Sous Chef, performs journeyman level food preparation duties. Prepares raw materials, side dishes, sauces and condiments necessary for the day to day operation for the ala carte restaurant and any other food outlets. Cooks menu items according to established recipes and procedures, and according to established Food Safety and Sanitation Standards for the kitchen operation. Trains and supervises Assistant Cooks and Food Service Workers in the performance of food preparation duties and other kitchen duties, including kitchen sanitation and hygiene. Ensures that all food quality temperatures are kept with a proper inventory and food rotation standards. Checks invoices during shipment arrival for discrepancies. Responsible for all food leaving the kitchen, in that it is served, displayed, and garnished properly. Adheres to recipes at all times and follows implemented standard operations steps at all times.
